Mash berries add campden tablets let soak overnight.
Soak spices and tea bags overnight in 2 cups of fresh water.
After a day strain strawberries to remove pulp, seeds etc. Strain at least twice. Move juice to carboy.
Mix all ingredients. Top off carboy with water. Pitch yeast, add airlock.

6/26/97 Yeast/Egg smell. Pour wine off through strainer added 5 tea acid and 5 campden tablets.
6/28/97 Added new yeast and strawberry juice.
6/29/97 Rack to new carboy, added strawberry juice with added sugar to original S.G. Added one pack of lalvin 71b-1122 wine yeast. Added French Oak / Hickory Chips.
7/6/97 Add more wood chips about 1.5 oz.
7/8/97 Top off with more strawberry juice, yeast energizer and more yeast.
7/9/97 Minimal ferment.
7/11/97 Strong ferment
7/21/97 Add bentonite and yeast energizer
7/29/97 Rack. Top off new carboy with strawberry juice
