Steps required for this batch

  • Mix all ingriedients as per instructions and pitch yeast.

    • 7/17/97 Started.
    • This wine required about one month to complete. The directions are fairly straight forward. It is important to note that this kit makes "Chianti-Style" wine not real chianti. The end product is a very reasonable copy of chianti. This kit is good for the beginner and makes a strong wine with a high tannin content. It may or may not improve with age. The only deviation from the instructs was to add additional wood chips to the wine. This improved the wine somewhat. It is recommended to add additional chips if you like alot of wood flavor in your wine. The wine is ready for drinking almost immediately.
    • 12/25/97 Wine is still strong and good.
    • 3/1/99 Wine has mellowed, decent taste. Good table wine.
